BLT With Arugula

Gourmet BLT with peppery baby arugula.
Ingredients:
  • 2-3 slices thick smoked bacon
  • 1-2 thin slices of a fresh, large tomato
  • 1-2 ounces (a couple handfuls) fresh baby arugula (can substitute watercress)
  • 2 slices of bread
  • Mayonnaise
Instructions:
  • Prepare the bacon: Heat a large sauté or cast iron pan over medium-low heat. Place bacon strips in a single layer and cook until lightly browned and crispy on both sides. Transfer cooked bacon to a paper towel-lined plate to drain excess fat, reserving about half a teaspoon in the pan for flavor. Properly dispose of remaining bacon grease to prevent plumbing issues.
  • Add fresh baby arugula or watercress to the pan with the remaining fat. Cook until the greens begin to wilt, then promptly remove from the heat and the pan to halt the cooking process.
  • Toast bread slices in a toaster until golden brown. Spread with mayonnaise or your favorite spread, or butter if you prefer. Layer with crispy bacon, fresh sliced tomato, and lightly wilted arugula. Cut the sandwich on the diagonal for a beautiful presentation. Enjoy while the sandwich is warm and ingredients are fresh.
