Elevate your BLT with prosciutto, capers, and juicy vine-ripened tomatoes for a gourmet twist.
Ingredients:
  • 80ml cream
  • 40.00 ml capers, rinsed
  • Finely grated zest of 1 lemon
  • 40.00 ml chopped fresh chives
  • 36.40 gm olive oil
  • 200g thinly sliced prosciutto
  • 8 slices crusty Vienna bread
  • 50g baby watercress salad
  • 2 medium vine tomatoes, thickly sliced
  • Freshly ground black pepper, to taste
Instructions:
  • Combine cream, capers, zest, and chives in a blender and puree until silky smooth like mayonnaise.
  • In a large non-stick pan over medium heat, crisp up and turn prosciutto to golden perfection. Set aside on paper towels. Next, toast bread in two batches in the same pan until both sides are beautifully golden.
  • Arrange a bed of baby watercress salad, prosciutto, tomato, and mayonnaise on half of the bread slices, then sprinkle with pepper. Place the remaining bread on top and serve promptly.
