Blue cheese, prosciutto and rocket bruschetta

Elevate Valentine's Day with these indulgent bruschetta.
Ingredients:
  • 4 thick slices woodfired bread
  • 80ml olive oil
  • 1 garlic clove, halved
  • 40.00 ml balsamic vinegar
  • 2.00 gm brown sugar
  • 80g wild rocket leaves
  • 4 slices prosciutto
  • 120g blue cheese, crumbled
  • 10 walnut halves, lightly toasted
Instructions:
  • Brush the bread generously with flavorful olive oil before placing it on the grill to achieve a beautiful golden color. Flip the bread and cook the other side as well, then enhance the flavor by rubbing it with a clove of garlic.
  • In a small bowl, combine the remaining oil, vinegar, and sugar, season with salt and pepper, and whisk until well mixed. Toss the rocket with half of the dressing. Layer each slice of bread with a slice of prosciutto and the dressed rocket. Sprinkle with cheese and walnuts, drizzle with the rest of the dressing, and enjoy!
