Blueberries in rose wine jelly

Elegant summer dessert for grown-ups.
Ingredients:
  • 100g blueberries
  • 400ml rose wine (Lindemans Bin 35 brand)
  • 100g (1/2 cup) caster sugar
  • 12.00 gm powdered gelatine
Instructions:
  • Arrange four elegant 125ml (1/2-cup) serving glasses on a baking tray. Distribute half of the blueberries evenly among the glasses.
  • In a medium saucepan, stir together the wine and sugar over medium heat until the mixture comes to a simmer, about 5-6 minutes.
  • Lower the heat and pour 60ml (1/4 cup) of the hot wine mixture into a small heatproof bowl. Sprinkle gelatine over it and stir until dissolved. Combine the gelatine mixture with the remaining hot wine mixture. Take it off the heat and let it sit for 5 minutes to cool.
  • Transfer the wine mixture to a heatproof jug and divide half of it into glasses evenly. Chill in the fridge for 20 minutes until slightly set. Add the remaining blueberries, pour in the rest of the wine mixture, cover with plastic wrap, and refrigerate for 3 hours until fully set. Serve cold.
