Blueberry walnut banana scones with a sweet icing drizzle.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.25 cup white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 cup chilled unsalted butter, cut into cubes
  • 0.5 cup blueberries, cut in half if large
  • 0.25 cup chopped walnuts
  • 1 (6 ounce) container blueberry-flavored yogurt
  • 1 large banana, mashed
  • 1 tablespoon brown sugar
  • 0.25 cup confectioners' sugar
  • 1.5 teaspoons water
Instructions:
  • Preheat your oven to 425 degrees F (220 degrees C) and prepare a greased baking sheet.
  • In a bowl, combine both flours, white sugar, baking powder, baking soda, and salt. Use 2 knives or a pastry blender to cut in the butter until the mixture looks like coarse crumbs. Add blueberries and walnuts. In a small bowl, beat yogurt and banana until smooth. Gently stir this mixture into the flour until the dough comes together.
  • Transfer the dough onto the baking sheet and shape it into an 8-inch circle. Use a butter knife to cut the dough into 8 wedge-shaped pieces, then evenly sprinkle brown sugar over the dough.
  • Bake until beautifully golden, about 18 to 20 minutes in the preheated oven.
  • Once scones are in the oven, combine confectioner's sugar and water, then drizzle the mixture over the warm scones right before serving.
