Blueberry cheesecake cookies: Creamy, sweet, and salty with a tart berry twist.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 1 cup sugar
  • 10 tablespoons unsalted butter, softened
  • 1 egg
  • 0.25 teaspoon almond extract
  • 0.33333334326744 cup sour cream
  • 1.5 cups fresh blueberries
  • 4 ounces cream cheese, cut into 1/4-inch pieces and frozen
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare 2 baking sheets by lining them with parchment paper.
  • Combine flour, baking powder, baking soda, and salt in a medium bowl, whisking until well mixed.
  • Cream together sugar and butter in a large bowl using an electric mixer until fluffy, approximately 2 minutes. Incorporate egg, vanilla extract, and almond extract until thoroughly mixed. Add 1/3 of the flour mixture and stir gently. Mix in 1/2 of the sour cream. Alternate adding the remaining flour mixture and sour cream, starting and ending with the flour mixture, stirring until just combined. Be careful not to overmix. Gently fold in blueberries and frozen cream cheese chunks.
  • Scoop 1 1/2 tablespoons of dough and place them on the baking sheets, ensuring they are 2 inches apart.
  • Bake the cookies in the preheated oven for 15 to 18 minutes, or until the bottoms just start to brown. Let them cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
