This fruity French dessert, a twist on clafoutis with blueberries instead of cherries, is a heavenly treat with a light, custard-like batter.
Ingredients:
  • 1 pint fresh blueberries, rinsed and drained
  • 3 eggs
  • 1 egg yolk
  • 1 cup white sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 0.75 cup all-purpose flour, sifted
  • 1 pinch salt
  • 1 tablespoon confectioners' sugar for dusting
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while lightly greasing an 8x8 inch baking dish.
  • Spread the blueberries evenly on the bottom of the baking dish. Beat the eggs and egg yolk until fluffy. Add sugar and whisk until thickened. Gradually mix in milk, vanilla extract, sifted flour, and salt until mixture is airy. Pour over blueberries to cover evenly.
  • Bake in a preheated oven on the center rack until the top is golden and springs back when touched, approximately 45 minutes. Allow it to cool slightly, then cut into 8 equal pieces, dust with confectioners' sugar, and serve promptly.
