Indulge in versatile blueberry crepes - sweet or savory fillings!
Ingredients:
  • 0.33333334326744 cup milk
  • 3 tablespoons all-purpose flour
  • 1 large egg
  • 3 teaspoons unsalted butter, melted, divided
  • 2 teaspoons white sugar
  • 0.25 cup freshly squeezed orange juice
  • 0.25 cup white sugar
  • 3 pinches ground cinnamon, or to taste
  • 1 teaspoon grated orange zest
  • 1 cup fresh blueberries
  • 0.5 cup whipped cream, or to taste
Instructions:
  • Combine milk, flour, egg, 2 teaspoons melted butter, and 2 teaspoons sugar in a bowl and whisk until smooth. Chill crepe batter covered in the refrigerator for at least 30 minutes, or overnight.
  • 1. Preheat an 8-inch saute pan over medium heat and brush with 1 teaspoon melted butter. Pour in 1/4 cup crepe batter and swirl to cover the bottom of the pan. Cook until edges brown and bubbles form, about 1-2 minutes. Flip and cook the other side until lightly browned, around 1 minute. Transfer to a plate and repeat for the remaining 3 crepes.
  • Simmer freshly squeezed orange juice, 1/4 cup sugar, and a touch of cinnamon in a small saucepan until it gently bubbles. Take it off the heat and allow it to cool for 5 minutes before adding fragrant orange zest.
  • Stuff each delicate crepe generously with fresh blueberries and fluffy whipped cream, then roll into a delectable bundle. Drizzle luscious syrup over the top for the finishing touch.
