Impress with apple blueberry muffins enhanced by a crumble topping.
Ingredients:
  • 2 tablespoons all-purpose flour
  • 2 tablespoons wheat germ
  • 1 tablespoon canola oil
  • 2 cups all-purpose flour
  • 0.25 cup wheat germ
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 large eggs, beaten
  • 2 (3.9 ounce) containers Mott's® Healthy Harvest Blueberry Delight Applesauce
  • 0.5 cup brown sugar
  • 0.25 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
Instructions:
  • Preheat the oven to 350 degrees F. Lightly oil or coat 12 muffin cups with nonstick cooking spray. Mix together flour, wheat germ, and brown sugar in a bowl. Add oil and stir until well combined.
  • In a large bowl, combine flour, wheat germ, baking powder, baking soda, cinnamon, and salt. In a separate bowl, whisk together eggs, applesauce, brown sugar, oil, and vanilla until well blended.
  • Combine the liquid ingredients with the dry ones until just moistened, then gently mix in the blueberries. Spoon the batter into the muffin cups and sprinkle the topping evenly over them, using the back of a spoon to press it in.
  • Bake for 20 to 22 minutes until the topping is golden and a toothpick inserted in the center comes out clean.
