Healthy blueberry flaxseed pancakes: Fluffy and fiber-rich.
Ingredients:
  • 1.5 cups dry pancake mix
  • 0.5 cup flax seed meal
  • 1 cup skim milk
  • 1 cup fresh or thawed frozen blueberries
Instructions:
  • Heat a nonstick skillet over medium heat.
  • Combine the pancake mix and flax seed meal in a medium bowl. In a separate bowl or measuring cup, whisk together the milk and eggs. Pour the liquid mixture into the dry ingredients and stir until just moistened.
  • Drop 1/4 cupfuls of batter onto the sizzling skillet, scatter with desired amount of blueberries, cook until bubbles form, flip, and brown the other side.
