Delicious homemade blueberry muffins with fresh or frozen berries.
Ingredients:
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 0.75 cup milk
  • 0.33333298563957 cup vegetable oil
  • 1 cup fresh blueberries
  • 1 teaspoon grated lemon zest
Instructions:
  • Preheat oven to 400 degrees F (205 degrees C) and grease only the bottoms of 12 muffin cups or line with baking cups.
  • - Combine flour, sugar, baking powder, blueberries, lemon zest, and salt in a medium bowl. Mix thoroughly. - In a small bowl, blend milk, oil, and egg until smooth. - Add the dry ingredients to the wet ingredients all at once. Stir until just combined; the batter should be slightly lumpy.
  • Bake the filled cups for 20 to 25 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 1 minute before removing from the pan, then serve warm.
