Homemade Blueberry Muffins

Quick and fluffy blueberry muffins ready in a flash!
Ingredients:
  • Cooking spray to grease muffin cups or 12 paper baking cups
  • 1 cup fresh, frozen or canned blueberries
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
Instructions:
  • Preheat the oven to 400°F. Lightly grease only the bottoms of 12 standard-size muffin cups with cooking spray, or use paper baking cups in each cup.
  • For canned blueberries, drain in a strainer. Rinse fresh or canned blueberries with cool water, discard any crushed ones, remove any stems, and do not thaw frozen blueberries.
  • Combine milk, oil, vanilla, and egg in a large bowl. Mix thoroughly using a fork or whisk. Add flour, sugar, baking powder, and salt at once, stirring until just combined. Remember, a few lumps are okay for perfect muffins - overmixing leads to high peaks.
  • Gently fold in the blueberries, then fill each muffin cup evenly with the batter.
  • Bake until beautifully golden brown. Allow muffins to rest for 5 minutes in the pan if using a sprayed pan, then transfer to a cooling rack. For paper baking cups, remove immediately. Enjoy warm or at room temperature.
