Simple and delicious homemade blueberry muffins with bursting fresh flavor. Avoid overmixing for perfect texture and peak up tops. Follow these easy steps for beautiful and tasty muffins!
Ingredients:
  • 1/4 cup vegetable oil or melted butter
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh, canned (drained) or frozen blueberries
  • 2 tablespoons coarse sugar or additional granulated sugar, if desired
Instructions:
  • Preheat your oven to 400°F and prepare a 12-cup muffin tin by greasing only the bottoms with shortening, cooking spray, or lining them with paper baking cups.
  • In a large bowl, vigorously whisk together milk, oil, and egg until fully combined. Add flour, granulated sugar, baking powder, and salt all at once, mixing just until the flour is moistened (it's okay if the batter is lumpy). Gently incorporate blueberries. Spoon the batter evenly into muffin cups and sprinkle each with 1/2 teaspoon coarse sugar before baking.
  • Bake for 20 to 25 minutes until golden brown and a toothpick inserted in the center comes out clean. Let cool for 5 minutes in a greased pan before transferring to a cooling rack, or immediately transfer paper baking cups to a cooling rack. Enjoy while warm if preferred.
