Blueberry Turnovers

Try this quick and tasty blueberry turnover for a sweet fruit dessert in under an hour.
Ingredients:
  • 2 cups fresh or frozen blueberries
  • 1/4 cup packed brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon grated orange peel
  • Dash of ground allspice
  • 2 sheets frozen puff pastry (from 17.3-oz package), thawed
  • 6 tablespoons firm butter, each tablespoon cut into 4 pieces
  • 2 egg yolks
  • 2 tablespoons milk
  • 1/4 cup granulated sugar
Instructions:
  • Preheat oven to 400°F and position the oven rack in the lower third. Line two large cookie sheets with parchment paper.
  • Combine blueberries, brown sugar, cornstarch, orange peel, cinnamon, and allspice in a bowl. Rest for 20-30 minutes to allow flavors to meld and juices to release.
  • On a floured surface, roll out one sheet of puff pastry into a 12x9-inch rectangle. Cut the dough into 6 squares using a pizza cutter, it's okay if they are not perfectly even. Keep the other sheet of puff pastry in the refrigerator for now.
  • Mix blueberry filling thoroughly. Place 2 heaping tablespoons of filling in the center of each pastry square, leaving a 1-inch border. Avoid overfilling to prevent spillage during baking. Top each filling mound with 2 pats of butter.
  • Combine egg yolks and milk in a small bowl using a fork. Brush the edges of each square with the egg mixture using a pastry brush or your fingertip. Fold each square from corner to corner to create a triangle shape, then lightly press the edges to seal using your fingertip. Crimp the edges with a fork and transfer the turnovers to a cookie sheet.
  • Brush the turnovers with more egg mixture, sprinkle 1 teaspoon of granulated sugar on each, and make one or two 1-inch steam vents on top using a sharp knife. Continue baking the first batch of 6 turnovers and repeat the process with the remaining pastry sheet and filling.
  • Bake turnovers for about 15 minutes until they are flaky and golden. Keep an eye on them after 10 minutes as they may brown quickly. If they start to look like they may burn, cover with foil and continue baking. Once done, let them cool for 5 minutes, then transfer from the parchment to a wire rack. Enjoy warm or at room temperature.
