Delicious blueberry waffles featuring juicy fresh blueberries for a delightful morning treat.
Ingredients:
  • 1.6666666269302 cups milk
  • 3 large eggs
  • 2 cups all-purpose flour
  • 2.25 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 cup melted butter
  • 0.66666668653488 cup blueberries
  • 1.5 cups blueberries
  • 3 T honey
  • 1/2 c orange juice
  • 1 T cornstarch
Instructions:
  • Prepare the waffle batter by whisking together milk and egg yolks in a medium bowl. Add flour, baking powder, and salt, then mix. Stir in melted butter and let the batter rest for approximately 30 minutes.
  • Prepare the waffle iron by lightly greasing it and preheating it as per the manufacturer's guidelines.
  • Whisk egg whites in a glass, metal, or ceramic bowl until they form stiff peaks. Gently fold them into the batter along with the blueberries.
  • Spoon batter onto hot waffle iron in batches. Cook until golden brown and no steam escapes, 4 to 6 minutes.
  • While waiting, prepare the sauce by combining blueberries, 1/4 cup orange juice, and honey in a medium saucepan over medium heat, then bring it to a boil.
  • Combine the remaining 1/4 cup of orange juice with cornstarch in a small bowl, then stir it into the blueberry mixture. Cook and stir constantly until the mixture thickens. Enjoy warm over waffles!
