Microwavable blueberry-apple crunch: Quick, delicious dessert ready in just 10 minutes.
Ingredients:
  • 1 cup all-purpose flour
  • 0.75 cup packed brown sugar
  • 0.5 cup rolled oats
  • 0.25 cup graham cracker crumbs
  • 1 teaspoon ground cinnamon
  • 0.5 cup melted butter
  • 3.5 cups peeled and sliced apples
  • 1.5 cups blueberries
  • 1 tablespoon lemon juice
  • 0.25 cup white sugar
  • 2 tablespoons cornstarch
  • 1 cup cold water
Instructions:
  • Prepare a 2-quart casserole dish by greasing it with a microwave-safe coating.
  • Combine flour, brown sugar, oats, graham cracker crumbs, and cinnamon in a bowl; mix in butter until fully combined. Press half of the oat mixture into the casserole dish. Top with apples and blueberries, then finish with a drizzle of lemon juice.
  • In a microwave-safe bowl, combine white sugar and cornstarch, then add water and vanilla extract, stirring until smooth. Microwave the sugar mixture, stirring every 45 seconds, until thickened and nearly clear (2 to 4 minutes). Drizzle the sauce over the fruit layer and sprinkle the remaining oat mixture on top.
  • Microwave fruit at 70% power until tender and juices bubble, about 8-10 minutes. Allow to cool briefly before enjoying.
