Fluffy orange rolls with blueberry-orange filling and zesty citrus glaze, perfect for brunch.
Ingredients:
  • 0.25 cup warm water
  • 1 teaspoon white sugar
  • 0.5 cup unsalted butter, softened
  • 1 cup whole milk
  • 0.25 cup orange juice
  • 5 cups bread flour
  • 1 tablespoon kosher salt
  • 1 cup white sugar
  • 2 tablespoons grated orange zest
  • 1 cup fresh blueberries
  • 2 cups powdered sugar
  • 3 tablespoons freshly squeezed orange juice
  • 2 tablespoons unsalted butter, softened
  • 2 teaspoons grated orange zest
Instructions:
  • First, combine warm water, yeast, and 1 teaspoon of sugar to activate the yeast. Let it sit for 5 to 10 minutes. In a separate bowl, whisk together flour and salt.
  • In a bowl, whip 1/2 cup of butter using an electric mixer until fluffy. Add sugar, milk, orange juice, and eggs until combined. Stir in the yeast mixture followed by the flour mixture until a dough forms.
  • Transfer dough to a heavily floured surface; knead until smooth and elastic for 5 minutes. Place dough in a greased bowl, turning once to coat both sides lightly. Cover and let rise in a dark, warm, draft-free place until doubled in size, about 2 hours.
  • Gently deflate dough and roll it out on a well-floured surface into a 12x22-inch rectangle.
  • For the filling, blend sugar and orange zest until fully incorporated. Spread a layer of butter evenly on the dough, keeping a 3/4 inch border. Sprinkle the sugar-orange zest mixture over the butter, followed by a generous amount of blueberries.
  • Roll the dough into a log from the long edge, then cut it into sixteen 1 to 1 1/2-inch pieces. Place the rolls in greased round cake pans and allow them to rise in a dark, warm, draft-free spot until they are approximately doubled in size, which should take 30 to 60 minutes.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake in the preheated oven for 25-30 minutes until rolls are golden brown on top and fully baked in the center. Remove and cool on wire racks for 5 minutes before serving.
  • Create a flavorful glaze by combining powdered sugar, orange juice, butter, and orange zest until smooth. Drizzle the glaze over the warm rolls.
