Blueberry & white chocolate dessert for two, ready in 8 minutes.
Ingredients:
  • 1/3 cup Original Bisquick™ mix
  • 1/4 cup granulated sugar
  • 3 tablespoons plus 1 teaspoon milk
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon vanilla
  • 1/4 cup fresh blueberries
  • 1/4 cup white vanilla baking chips
  • Fresh whipped cream, if desired
Instructions:
  • In a medium bowl, whisk together Bisquick mix, sugar, milk, oil, vanilla, and egg until the batter is mostly smooth with a few small lumps. Divide the batter evenly into 2 ungreased mugs.
  • Sprinkle each mug with fresh blueberries and chocolate chips without stirring.
  • Simultaneously microwave both mugs uncovered for 2 1/2 to 3 minutes until cakes are cooked and a toothpick inserted in the center comes out clean.
  • Allow to cool slightly, then generously garnish with billowy whipped cream and a handful of fresh blueberries right before serving, for an extra burst of flavor.
