Bok choy and feta triangles

Serve up crispy vegetarian pastries for a crowd-pleasing party snack!
Ingredients:
  • olive oil cooking spray
  • 4.60 gm olive oil
  • 1 garlic clove, crushed
  • 1 medium brown onion, finely chopped 1 bunch bok choy, trimmed, finely shredded
  • 175g feta, crumbled
  • 16 sheets filo pastry
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced) and line 2 baking trays with parchment paper. In a large frying pan over medium heat, sauté garlic and onion in oil for 3 to 4 minutes until the onion has softened. Transfer the mixture to a bowl.
  • Add the bok choy to the pan and cook briefly until just tender. Transfer to a paper towel-lined plate to cool for 5 minutes, then squeeze out excess moisture. Stir in the feta and bok choy mixture into the onion blend.
  • Lay the pastry on a clean work surface and cover it with a damp tea towel to keep it from drying out. Gently spray one sheet of the pastry with oil, then place another sheet on top. Cut the layered pastry into 4 long strips.
  • Place a generous tablespoon of the mixture at one end of each pastry strip. Fold one corner of the pastry diagonally across the filling to the opposite edge to create a triangle shape. Continue folding in a triangular fashion until you reach the end of the strip. Repeat with the remaining pastry, filling, and oil. Transfer the triangles onto the prepared baking trays, spray lightly with oil, and bake in the oven for about 15 minutes or until nicely golden. Finally, serve and enjoy!
