Bok Choy and Cashew Stir-Fry

Delicious 20-minute Asian stir-fry with bok choy, mushrooms, and nuts in a flavorful soy, garlic, and ginger sauce.
Ingredients:
  • 1/2 cup vegetable or chicken broth
  • 2 tablespoons soy sauce
  • 4 teaspoons cornstarch
  • 6 stalks bok choy
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced and separated into rings
  • 2 cloves garlic, finely chopped
  • 1 teaspoon finely chopped gingerroot
  • 1/2 pound mushrooms, cut in half
  • 1/2 cup whole cashews or peanuts
Instructions:
  • Combine the broth, soy sauce, and cornstarch in a bowl, and set aside. Then, separate the bok choy leaves from the stems and cut them into 1-inch pieces.
  • In a large nonstick skillet or wok, heat oil over medium-high heat. Add bok choy stems, onion, garlic, and gingerroot. Stir constantly and cook for 2 minutes. Add bok choy leaves and mushrooms. Continue to cook for 1 minute, stirring constantly.
  • Add the flavorful broth mixture and cook, constantly stirring, for about 4 minutes until it thickens. Then, gently fold in the crunchy cashews.
