Simple and delicious Southern blackberry cobbler made with canned berries and self-rising flour for a quick and convenient treat anytime.
Ingredients:
  • 0.66666668653488 cup cold vegetable shortening
  • 2 cups self-rising flour
  • 5 tablespoons cold water
  • 2 (15 ounce) cans blackberries in syrup
  • 0.75 cup white sugar
  • 0.33333334326744 cup self-rising flour
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Use a pastry cutter to incorporate the shortening into 2 cups of self-rising flour until it resembles small pea-sized pieces. Gradually add water, 1 tablespoon at a time, until the dough is cohesive. Divide the dough into 2 portions and roll out one portion on a floured surface into a 9-inch square that is 1/4 inch thick. Place the rolled-out dough into a 9x9-inch baking dish.
  • Use the same bowl from mixing the dough to combine blackberries with their juice, 3/4 cup sugar, and 1/3 cup self-rising flour. Stir until sugar dissolves. Pour over crust. Roll out remaining dough into a 9-inch square, cut into strips, and place over filling. Layer thin slices of butter on top, then sprinkle with 1/4 cup sugar.
  • Bake until the top crust turns a beautiful golden brown and the filling bubbles, approximately 30-40 minutes.
