Cozy up with a book, coffee, and a decadent pudding.
Ingredients:
  • 16 slices spicy fruit bread
  • 30g unsalted butter, softened
  • 80ml sherry
  • 120g dark chocolate, broken into pieces
  • 257.50 gm milk
  • 252.50 gm pure cream, plus extra to serve
  • 2 eggs
  • 110g caster sugar
  • 4.40 gm vanilla extract
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 170°C and generously grease a square 1.2 litre baking dish.
  • Toast the bread, spread it with butter on one side, cut slices in half, and overlap them in a dish to create two layers. Drizzle with sherry. Heat chocolate with milk and cream in a saucepan over medium heat, stirring gently until the chocolate melts.
  • Combine the eggs, caster sugar, and vanilla by whisking until well mixed. Add the chocolate mixture and pour over the bread, allowing it to rest for 10 minutes.
  • After 35 minutes in the oven, when the filling is slightly runny, let the pudding sit for 5 minutes. Finish by dusting with icing sugar and serving with an extra dollop of cream.
