Indulge in crisp chocolate cookies and cozy up with a book on rainy days.
Ingredients:
  • 185g butter, softened
  • 161.25 gm caster sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 500.00 ml Cake, Biscuit and Pastry plain flour
  • 32.50 gm cocoa powder, sifted
  • 20 dark chocolate melts
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and prepare 3 baking trays with baking paper.
  • In an electric mixer, blend butter, sugar, and vanilla until light and fluffy. Mix in the egg until well combined. Sift flour and cocoa over the butter mixture, then gently stir with a wooden spoon until combined.
  • Roll the dough between two sheets of baking paper to a thickness of 4mm. Use a 6.5cm scalloped-edge cookie cutter to cut out rounds from the dough. Transfer the rounds onto baking trays. Re-roll any remaining dough and repeat the process. Gently press the melts into the center of each round.
  • Bake for 10 minutes or until lightly golden. Let cool on trays for 5 minutes, then transfer to a wire rack to cool completely before serving.
