Irresistible boozy banana bread with ripe bananas and amaretto, perfect with a generous spread of butter.
Ingredients:
  • cooking spray
  • 2 cups all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 5 very ripe bananas, mashed
  • 0.75 cup brown sugar
  • 0.5 cup butter, softened
  • 2 eggs
  • 3 drops almond extract
  • 3 drops amaretto (almond-flavored liqueur)
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously spray a loaf pan with cooking spray.
  • Combine flour, salt, and baking soda, whisking them together in a bowl.
  • In a separate bowl, combine bananas, brown sugar, butter, eggs, almond extract, and amaretto. Gently fold in the flour mixture until just incorporated, about 1 minute. Transfer the batter to the prepared loaf pan.
  • Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean. Allow to cool for about 30 minutes before serving.
