Boozy berries with mascarpone cream

Intoxicate strawberries, then roast to juicy perfection.
Ingredients:
  • 500g strawberries, hulled
  • 40.00 ml Wynns Boronia All’uovo fortified wine or marsala
  • 20.00 gm caster sugar
  • 125g (1/2 cup) mascarpone
  • 125ml (1/2 cup) thickened cream
  • 12.00 gm icing sugar mixture
  • 1/2 tsp vanilla bean paste
Instructions:
  • Preheat your oven to 200°C. Arrange strawberries in a baking dish, drizzle with wine, sprinkle with sugar, and bake for 15 minutes until tender.
  • Prepare the luscious mascarpone cream by whisking together mascarpone, cream, sugar, and vanilla bean paste in a bowl until thick and creamy peaks are achieved.
  • Chill strawberries for 5 minutes, then enjoy with mascarpone cream.
