Strawberry gratin with kirsch & vanilla sabayon

Create an elegant dessert with just 5 ingredients in 15 minutes.
Ingredients:
  • 2 x 250g punnets strawberries, washed, hulled, thinly sliced
  • 4 egg yolks
  • 40.00 ml kirsch
  • 1 vanilla bean, split lengthways
Instructions:
  • Place the strawberries in a beautiful concentric pattern in four 500ml (2-cup) shallow ovenproof dishes.
  • In a medium heatproof bowl, combine egg yolks, sugar, kirsch, and vanilla bean seeds scraped using a small sharp knife.
  • Create a double boiler by positioning the bowl over gently simmering water, ensuring the bowl doesn't touch the water. Whisk the egg yolk mixture with an electric beater for 3-4 minutes until it becomes thick and pale, and you can see a ribbon trail forming when you lift the beaters.
  • Preheat the grill to medium heat, then generously spoon the sabayon over the strawberries. Grill for 1-2 minutes, or until the top turns a light golden color. Serve promptly.
