Savory homemade BBQ sauce with a bold kick of molasses, chili, onion, lemon juice, tomato sauce, Worcestershire sauce, and bourbon.
Ingredients:
  • 1/4 cup vegetable oil, such as canola or peanut
  • 1/4 cup butter
  • 1 chopped chile pepper, such as a serrano
  • 1 medium yellow or white onion, grated
  • 1 cup bourbon or Tennessee whiskey
  • 1/2 cup ketchup or tomato sauce
  • 1/2 cup lemon juice
  • 1/2 cup apple cider vinegar
  • 1/3 cup dark molasses
  • 1/3 cup Worcestershire sauce
  • 2-3 tablespoons brown sugar
  • Salt to taste
Instructions:
  • In a saucepan over medium-high heat, cook the butter and oil until heated.
  • Prepare the onion: grate using a box grater for a coarse texture, or finely mince if a grater is unavailable.
  • Sauté grated onion and chile in the oil/butter mixture over medium heat for 3-4 minutes until onions are translucent, being careful not to let them brown.
  • Pour in the bourbon and allow it to boil in the pan over medium-high heat for 5 minutes.
  • Combine the ketchup, lemon juice, vinegar, Worcestershire sauce, molasses, and sugar, stirring until well mixed. Simmer.
  • Simmer the sauce briefly to meld the flavors. Taste and adjust: salt for balance, cayenne for heat, and molasses for sweetness as needed.
  • Simmer the sauce gently until it thickens over 20 minutes. Keep it warm while preparing the ribs. Alternatively, prepare the sauce in advance and reheat when ready to use.
