Modern twist on classic BBQ ribs.
Ingredients:
  • 20.00 gm Cajun seasoning mix
  • 5.00 gm smoked paprika
  • 3 x 500g racks American-style pork ribs
  • 260.00 gm tomato sauce
  • 93.23 gm barbecue sauce
  • 2 garlic cloves, crushed
  • 62.50 ml bourbon
  • 23.40 gm Dijon mustard
  • 24.40 gm Worcestershire sauce
  • Olive oil cooking spray
  • 4 corn cobs, husks and silks removed, halved
  • Green salad, to serve
Instructions:
  • Preheat a covered barbecue on high to 200°C (see note). Heat up the barbecue on high to 200°C with the cover on.
  • Mix seasoning and half of the paprika in a bowl. Season both sides of the ribs with the mixture. Wrap each rack of the ribs in foil to make 3 parcels. Place the foiled ribs on a wire rack in a large disposable foil baking tray. Cook using indirect heat for 1 hour and 30 minutes or until tender. Let it rest for 5 to 10 minutes to cool slightly. Unwrap the foil and cut each rib in half.
  • In a saucepan over medium-high heat, mix together tomato sauce, barbecue sauce, garlic, bourbon, mustard, worcestershire sauce, and the rest of the paprika. Bring to a boil, then lower the heat and simmer, stirring frequently, for 5 minutes until the sauce slightly thickens. Let cool and set aside. Reserve 1/2 cup of the sauce.
  • Preheat barbecue plate and chargrill over medium heat. Brush ribs with some of the remaining sauce. Spray ribs and corn with oil. Grill corn, turning occasionally, for 10-12 minutes until lightly caramelized and tender. Grill ribs on plate, brushing with sauce and turning occasionally, for 8-10 minutes until they're slightly caramelized and tender. Serve ribs with corn, extra sauce, and a side salad.
