Grilled Bourbon-Chicken Pizza

Elevate your grilled pizza with Pillsbury classic pizza crust and a touch of bourbon-infused barbecue sauce for a sophisticated twist.
Ingredients:
  • 1 cup barbecue sauce
  • 2 tablespoons bourbon
  • 1 teaspoon finely chopped chipotle chile in adobo sauce (from 7-oz can)
  • 1 clove garlic, finely chopped
  • 2 boneless skinless chicken breasts
  • 1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
  • 2 cups shredded reduced-fat mozzarella cheese (8 oz)
  • 1 orange bell pepper, chopped
  • 1/2 medium red onion, thinly sliced
  • 2 slices bacon, crisply cooked, crumbled
Instructions:
  • Preheat a gas or charcoal grill. In a small saucepan, combine barbecue sauce, bourbon, chipotle chile, and garlic. Bring to a boil, then remove from heat. Set aside 5 tablespoons of the sauce in a small bowl.
  • Grill the chicken over medium heat, covering it and cooking for 15 to 20 minutes. Turn the chicken once and brush it frequently with the sauce. The chicken is ready when the juices run clear and the center reaches at least 165°F. Transfer the grilled chicken to a plate and cut it into bite-size pieces. In a medium bowl, mix the chopped chicken with 2 tablespoons of the barbecue sauce. Dispose of any leftover sauce used for brushing.
  • Preheat the oven to 425°F and grease a 15x10-inch cookie sheet. Spread out the dough on the sheet, pressing from the center out to the edges. Brush the crust with the 3 tablespoons of reserved barbecue sauce. Sprinkle 1/4 cup of cheese over the sauce. Layer on the chicken, bell pepper, onion, bacon, and the remaining 1 3/4 cups of cheese.
  • Bake for 15 to 18 minutes, or until the edges are caramelized and the cheese is gooey. Slice into squares.
