Grilled Bourbon Chicken

Grill up a flavorful New Orleans-inspired dish with a key ingredient, perfect over rice for a delicious meal.
Ingredients:
  • 2 lb boneless skinless chicken breasts
  • 1/3 cup bourbon
  • 1/3 cup soy sauce
  • 1/4 cup olive oil
  • 1 tablespoon grated gingerroot
  • 4 cloves garlic, crushed
  • Coarse sea salt
Instructions:
  • Thinly slice chicken breasts to create cutlets and then transfer them into a resealable plastic bag.
  • Combine bourbon, soy sauce, oil, gingerroot, and garlic in a small bowl and whisk until well blended. Pour the marinade over the chicken in a bag, seal, and refrigerate for 1 hour.
  • Preheat gas or charcoal grill. Remove chicken from marinade and discard marinade. Grill chicken over medium heat for 8 to 12 minutes, turning once, until the juice runs clear when the thickest part is cut (165°F). Sprinkle with sea salt before serving.
