Grilled Bourbon-Glazed Beef Kabobs

Sweet and tangy glazed kabobs cooked in just 25 minutes!
Ingredients:
  • 2 tablespoons bourbon or water
  • 1 tablespoon teriyaki baste and glaze (from 12-oz bottle)
  • 1 tablespoon frozen (thawed) orange juice concentrate
  • 1/4 cup packed brown sugar
  • Dash of crushed red pepper flakes
  • 1/2 lb beef boneless top sirloin, cut into 1 1/2-inch cubes
  • 8 pieces (1 1/2-inch) red onion
  • 8 fresh whole mushrooms
  • 8 pieces (1 1/2-inch) red bell pepper
  • 1 teaspoon olive or vegetable oil
Instructions:
  • Preheat gas or charcoal grill. In a 1-quart saucepan, combine 1 tablespoon bourbon, teriyaki glaze, orange juice concentrate, brown sugar, and crushed red pepper. Bring to a boil over medium heat, then reduce to low and simmer for 5 minutes, stirring occasionally. Remove from heat and stir in the remaining 1 tablespoon bourbon. Set aside 2 tablespoons of the glaze for later use.
  • Combine beef, onion, mushrooms, and bell pepper in a bowl. Drizzle with oil and toss to coat. Sprinkle with salt and toss again. Thread the ingredients alternately onto metal skewers, leaving a 1/4-inch space between each piece.
  • Grill the kabobs covered over medium heat for 9 to 11 minutes, turning once and basting with glaze during the last 3 minutes, until the beef reaches your preferred doneness and the vegetables are tender.
  • Brush the kabobs with a generous amount of the reserved 2 tablespoons of glaze right before serving.
