Tangy bourbon glaze adds a kick to any BBQ dish.
Ingredients:
  • 4 beef scotch fillets
  • 196.88 gm orange juice
  • 135.00 gm brown sugar, firmly packed
  • 62.50 ml bourbon whiskey, plus 1 tbsp extra
  • 20.00 ml orange rind, finely grated
  • 1 tsp mustard powder
Instructions:
  • Prepare the glaze by combining orange juice, brown sugar, bourbon whiskey, grated orange rind, and mustard powder in a saucepan over low heat until the sugar dissolves. Increase heat to medium and simmer until the glaze thickens, then stir in an additional tablespoon of bourbon whiskey.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill 4 beef scotch fillet steaks for 2 minutes on each side for a rare cook. Lower the heat to medium, brush the steaks with glaze, and continue grilling for 2-3 minutes on each side until charred and glossy.
