Try these mouth-watering BBQ bourbon pork ribs recipe for a delicious glaze.
Ingredients:
  • 85.80 gm Brand Tomato Sauce
  • 93.23 gm barbecue sauce
  • 82.50 ml bourbon
  • 59.40 gm brown sugar
  • 3.75 gm smoked paprika
  • 2 garlic cloves, crushed
  • 1.5kg BBQ Pork Ribs
  • 800g red washed potatoes, cut into wedges
  • 36.80 gm rice bran oil
  • 2 corn cobs, each cut into 3 pieces
  • Lime wedges, to serve
Instructions:
  • Mix together the tomato sauce, barbecue sauce, bourbon, sugar, paprika, and garlic in a glass or ceramic dish. Add the ribs and evenly coat them in the marinade. Cover and refrigerate for at least 4 hours, or preferably overnight. Allow the ribs to sit at room temperature for 1 hour before baking.
  • Preheat oven to 180°C (160°C fan).
  • On a spacious baking tray, lay out the potatoes. Drizzle with oil, season, and toss to evenly coat. Arrange in a single layer and bake for 1 1/4 hours until golden and tender.
  • Arrange the ribs in a large baking dish in a single layer and pour over the marinade, setting aside 1/2 cup for later. Cover with foil and bake with the potatoes for 1 hour. Remove foil, drizzle with reserved marinade, and turn to coat. Increase oven temperature to 200˚C or 180˚C fan and bake for 10-15 minutes until caramelised.
  • Cook corn in boiling, microwaving, or steaming water for 3-5 minutes until tender. Serve ribs alongside potato wedges, corn, and lime wedges.
