Halve the tomatoes, trim the mushrooms, and remove excess fat from the bacon. 4. Place chipolatas and tomatoes on a tray, lightly drizzle with oil, and grill for 4 minutes. Turn chipolatas, add mushrooms face up on the tray, drizzle with oil, and season with salt and pepper. Arrange bacon around and grill for 7 to 8 minutes until chipolatas are cooked through. 5. When extras are almost ready, preheat the oven to 180ºC/350ºF/gas 4. Keep extras warm in the oven at the bottom. 6. Pat down the bubble and squeak, make four dents evenly spaced. Crack eggs into the dents and season with salt and pepper. Bake in the oven for about 8 minutes until eggs are cooked to your liking. 7. Serve by placing the bubble & squeak and eggs in the middle of the table with the tray of extras on the side.
