Grandma Ollie-Belle's famous greens with flavorful pot-liquor, served with green onions, black-eyed peas, and rice.
Ingredients:
  • 2 pounds collard greens - rinsed, stemmed and thinly sliced
  • 2 pounds fresh ham hocks
  • 0.5 pound salt pork
  • 3 quarts chicken stock
  • 1 cup chopped onion
  • 2 bay leaves
  • 0.25 teaspoon red pepper flakes
  • 2 tablespoons white sugar
  • salt and freshly ground black pepper to taste
  • 2 teaspoons red wine vinegar
Instructions:
  • In a large pot, combine ham hocks, salt pork, onion, bay leaves, red pepper flakes, sugar, and chicken stock. Bring to a boil, then simmer for 30 minutes.
  • Add collard greens to the pot, bring to a boil, then reduce heat and simmer for 30 minutes until tender. Season with red wine vinegar, salt, and pepper to taste.
