Sweet collard greens sautéed with Vidalia onion, braised, and served with tangy honey-ginger balsamic dressing.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 Vidalia or other sweet onion, sliced
  • 1.5 pounds collard greens - rinsed, trimmed and chopped
  • 0.5 cup water
  • 5 tablespoons melted butter
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon grated fresh ginger root
  • salt and freshly ground black pepper to taste
Instructions:
  • In a large skillet over medium heat, warm oil. Sauté onion until softened, for about 5 minutes. Add collard greens in batches, if needed, until slightly wilted and fitting in the skillet. Pour in water and cook until greens are tender and bright, 5 to 7 minutes. Adjust heat as needed to prevent burning. Drain excess liquid before serving.
  • Combine melted butter, vinegar, honey, and ginger in a serving bowl while the greens are cooking.
  • Combine the drained greens with the tangy vinegar mixture in a bowl. Season to perfection with salt and pepper and serve while still warm.
