Elevate leeks in this vibrant side dish for a delightful surprise.
Ingredients:
  • 20g butter
  • 3 medium leeks, dark green part trimmed and discarded
  • 100mls dry white wine
  • 200mls chicken style liquid stock
  • 62.50 ml chopped fresh parsley
Instructions:
  • Trim off and discard tough outer layers of the leeks. Cut each leek into 10cm lengths at a diagonal angle and thoroughly wash.
  • In a large frying pan over high heat, heat olive oil and butter or margarine. Add leeks and cook over medium heat, stirring until leeks are well coated and starting to soften.
  • Turn up the heat to high and pour in the white wine and chicken stock, then swirl the pan gently to mix the liquids together.
  • Simmer gently with pan covered over medium-low heat for 10 minutes until leeks are tender.
  • Sprinkle in the freshly chopped parsley, then dish out onto a serving plate and enjoy warm or at room temperature.
