Elevate bran muffins with a twist - deliciously malty, nutty, and sweetened with honey. Customize with your favorite mix-ins for a flavorful treat.
Ingredients:
  • 1 cup (60g) wheat bran
  • 1 1/2 cups (180g) white whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup (77g) light brown sugar
  • 1/3 cup (113g) honey
  • 1/3 cup (70g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 3/4 cup unsweetened applesauce (140g) or mashed ripe banana (170g)
  • 3/4 cup (180ml) buttermilk
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 350°F.
  • Spread wheat bran on a baking sheet. Toast in the oven, stirring halfway, until fragrant and nutty, 8 to 10 minutes. Be cautious as it can brown fast. Cool in the pan before moving on to the next steps.
  • Preheat the oven to 425°F. Gently spray the tops of 2 standard muffin pans with nonstick baking spray. Place paper liners in every other cavity.
  • In a medium bowl, mix together the toasted wheat bran, flour, baking powder, baking soda, salt, and cinnamon. In a separate large bowl, whisk together the brown sugar, honey, and melted butter until smooth. Add the eggs one at a time, fully combining before adding the next. Stir in the applesauce or mashed banana, followed by the buttermilk and vanilla extract.
  • Mix the wet and dry ingredients until just combined with no dry streaks of flour. Divide the batter evenly into the 12 paper liners using a cookie scoop or spoons, filling them nearly to the top.
  • Bake the muffins at 375°F for 5 minutes. Lower the temperature to 350°F and bake for an additional 10-13 minutes until a toothpick inserted in the center comes out clean.
  • Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling. Serve warm or at room temperature. Store leftovers in an airtight container on the counter for up to 3 days. Enjoy and don't forget to leave a review if you loved the muffins!
