Brandy Baked Peaches

Brandy-cinnamon baked peaches, perfect with ice cream for a refreshing summer treat.
Ingredients:
  • cooking spray
  • 3 fresh peaches, halved and pitted
  • 0.25 cup butter
  • 1 tablespoon sliced almonds
  • 0.25 cup honey
  • 0.25 cup brown sugar
  • 1.5 teaspoons ground cinnamon
  • 2 tablespoons brandy
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350°F (175°C) and coat a baking dish with cooking spray.
  • Place the peaches cut-side up in the baking dish.
  • In a saucepan over gentle heat, combine butter and almonds until butter melts, for about 2 minutes. Mix in honey, brown sugar, and cinnamon until simmering. Stir in brandy and salt until dissolved. Remove from heat, add vanilla extract, then pour over peaches.
  • Bake peaches in a preheated oven until tender, for about 30 minutes.
