Elevate your Christmas pudding with a splash of orange-infused brandy butter drizzle.
Ingredients:
  • 185g butter, at room temperature
  • 1 large orange, rind finely grated
  • 120g (1/2 cup) pure icing sugar
  • 100ml (1/3 cup) brandy
Instructions:
  • Place a sheet of non-stick baking paper on the base of a 23cm round cake pan.
  • In a medium bowl, use an electric beater to whip together butter and orange rind until creamy. Slowly add icing sugar, beating well each time until mixture is light and fluffy.
  • Slowly add brandy while beating on low speed until thoroughly mixed. Evenly spread the brandy butter in the lined pan, cover with foil, and refrigerate for a minimum of 1 hour until firm to the touch.
  • Cut the butter into 10 star-shaped portions using a 5cm cutter. Serve alongside the steamed Christmas pudding.
