Flavorful bratwurst soup with potatoes and beans, hearty and ideal for chilly days.
Ingredients:
  • 5 fresh bratwurst sausages
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 carrots, sliced
  • 4 ribs celery, chopped
  • 2 teaspoons chopped garlic
  • 2 (32 ounce) cartons chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup chopped fresh basil
  • 0.25 cup chopped fresh flat-leaf parsley
  • 2 teaspoons ground thyme
  • 6 potatoes, cut into cubes
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 12 ounces spinach, coarsely chopped, or more to taste
Instructions:
  • Heat up your outdoor grill to medium-high heat and gently oil the grate.
  • Grill bratwursts for about 5 minutes on each side until fully cooked. Allow to cool before slicing into 1/4-inch pieces.
  • In a large pot over medium-high heat, sauté onion, carrots, and celery in olive oil until onions are tender, about 5-8 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Combine chicken broth, tomatoes, sliced bratwurst, basil, parsley, thyme, and cayenne pepper with the onion mixture. Bring to a boil, then lower the heat, cover, and simmer for 20 minutes.
  • Combine the potatoes with the bratwurst mixture. Bring the mixture to a boil, then lower the heat and simmer until the potatoes are nearly cooked, around 15 minutes.
  • Add the beans and spinach to the pot and allow to simmer for 5 to 10 minutes until heated through and the potatoes are cooked.
