Brats and Beans Soup

Savory bratwurst and creamy navy bean soup, ideal for chilly weather.
Ingredients:
  • 1 (19.8 ounce) package bratwurst sausages
  • 2 medium carrots, chopped
  • 1 medium onion, chopped
  • 3 cups cooked navy beans
  • 2 cups chicken broth
  • 0.25 cup pickled jalapeno pepper slices, chopped
  • 1.5 cups milk, divided
  • 0.25 cup all-purpose flour
  • 1 (8 ounce) package shredded Cheddar cheese
  • 2 cups torn fresh spinach
Instructions:
  • Peel off and discard bratwurst casings. Brown and crumble bratwurst, carrots, and onion in a large skillet over medium-high heat for about 7 minutes. Stir in cooked navy beans, chicken broth, and jalapenos, then bring to a boil.
  • Combine 1/2 cup milk with flour, then mix into soup until thickened, around 3 minutes. Lower heat and mix in the remaining 1 cup milk and shredded Cheddar cheese until the cheese is melted.
  • Add fresh spinach to the pan and cook briefly until it wilts, which should only take 1 to 2 minutes. Don't forget to season with a sprinkle of salt and pepper to enhance the flavors.
