Decadent Brazilian carrot sheet cake with rich chocolate icing.
Ingredients:
  • 3 large carrots, peeled and thinly sliced
  • 4 eggs
  • 1 cup cooking oil
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons butter or margarine
  • 1 cup white sugar
  • 1 cup instant hot chocolate mix
  • 0.75 cup milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 baking dish.
  • Combine carrots, eggs, and oil in a blender or food processor until carrots are finely chopped. Transfer the mixture to a mixing bowl and add 2 cups of sugar, mixing until well combined. Stir in flour and baking powder until fully incorporated. Pour the batter into the prepared baking dish.
  • Bake in a hot oven until the top bounces back when gently pressed, approximately 40 minutes.
  • While the cake is baking, prepare the icing by combining butter, 1 cup of sugar, instant hot chocolate drink mix, and milk in a pan. Heat the mixture over medium-high heat, stirring constantly until it thickens almost to a boil. Once the cake is ready, take it out of the oven and promptly spread the icing evenly on top.
