Whip up Brazilian carrot cake in a blender, top with decadent chocolate shell.
Ingredients:
  • 2 cups white sugar
  • 3 eggs
  • 0.5 cup vegetable oil
  • 3 carrots, quartered
  • 0.5 cup cocoa powder
  • 6 tablespoons milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 10-inch cake pan, then dust it with flour.
  • In a blender, puree 2 cups of sugar, eggs, vegetable oil, and carrots until silky smooth, for about 5 minutes.
  • Transfer the carrot mixture into a bowl, then add the flour and baking powder. Thoroughly mix together before pouring the batter into the cake pan.
  • Bake at the set temperature until a toothpick inserted in the center comes out clean, for around 40 minutes. Let it cool in the pan for 5 minutes, then flip onto a wire rack to cool.
  • In a small saucepan over gentle heat, melt together 1/2 cup sugar, cocoa powder, milk, and butter, stirring consistently. Allow the sauce to bubble and thicken for about 3 to 4 minutes. Remove from heat and promptly pour over the cake.
