Delicious Brazilian prawn stew for a flavor-packed family meal.
Ingredients:
  • 275g (12) fresh raw banana prawns, peeled and deveined, halved lengthways
  • 5 cloves garlic
  • Finely grated zest of 1/2 orange, plus 1 tbsp juice
  • 2.40 gm salt
  • 18.20 gm olive oil
  • 1/2 medium brown onion, finely diced
  • 80g capsicum
  • 13g chilli
  • 3 tomatoes, finely chopped, from a 400g can of Coles Brand Whole Peeled Tomatoes
  • 400ml can coconut milk
  • Juice of 1/6 lime
  • 150.00 gm Brand Long Grain Rice, cooked (about 150.00 gm)
  • 20.00 ml coarsely chopped fresh coriander, from a bunch
Instructions:
  • Mix together prawns, 2 cloves of garlic, orange zest, and salt in a bowl, tossing occasionally as you prepare the stew.
  • In a large heavy saucepan over medium heat, sauté oil, onion, capsicum, chilli, and remaining garlic for 15 minutes until vegetables are very tender. Stir in tomatoes, cook for 5 minutes until they break down, then add coconut milk and 1 cup water. Cover and simmer for 10 minutes to develop flavors.
  • Cook the prawns in the coconut mixture for 2-3 minutes until they are just cooked through, then mix in the orange juice, lime juice, and season with salt and pepper.
  • Ladle the fluffy rice into bowls. Spoon the delicious stew over the rice, generously sprinkle with fresh coriander, and serve promptly.
