Brazilian Style Flan (Pudim de Leite Condensado)

Decadent flan crafted with eggs and condensed milk.
Ingredients:
  • 4 eggs, separated
  • 1 (14 ounce) can sweetened condensed milk
  • 0.75 cup milk, plus
  • 2 tablespoons milk
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a heavy saucepan over low heat, gently melt the sugar while stirring constantly. Once the sugar transforms into a rich golden brown syrup (about 10 minutes), swiftly pour it into a round baking dish. Swirl the dish to ensure the syrup covers all sides, then let it cool.
  • In a blender, combine egg yolks and blend on medium for 5 minutes. Add condensed milk, 3/4 cup plus 2 tablespoons milk, and egg whites, and blend until smooth. Pour the mixture into a baking dish and cover with foil. Create a water bath by placing the baking dish inside a roasting pan on top of a damp kitchen towel. Fill the roasting pan with boiling water halfway up the sides of the baking dish, and bake in the oven.
  • Bake in the oven until a knife inserted 1 inch from the edge comes out clean, approximately 45 to 50 minutes. Let the flan cool, then unmold onto a plate and refrigerate before serving.
