Brazilian-Style Beef Ribs

Tender Brazilian-style oven-roasted salted beef ribs.
Ingredients:
  • 1 (3 pound) rack of whole beef ribs (not short ribs)
  • 2 tablespoons sea salt, or more if needed
Instructions:
  • Heat the oven to 275°F (135°C).
  • Lay the rib rack with the white membrane facing up on a work surface. Slice under the membrane with a sharp knife to remove it in one piece, if you can, then discard it. Season both sides of the ribs generously with salt and transfer them to a roasting pan on a cooking rack.
  • Roast in the oven for 1 1/2 hours. Occasionally brush ribs with a little water, being cautious not to disturb the seasoning. Keep roasting, basting every 45 minutes to 1 hour, until meat is melt-in-your-mouth tender; approximately 6 hours total cook time.
  • Take out of the oven and allow to rest for 10 to 15 minutes before slicing into three portions.
