Brazilian-inspired dish: Brown rice topped with flavorful black beans, sausage, and tomatoes, served with sweet baked bananas.
Ingredients:
  • 2 cups lemon juice
  • 1 cup white sugar
  • 1 tablespoon rum
  • 6 ripe bananas, halved lengthwise
  • 7 cups water
  • 3.5 cups brown rice
  • 2 (15 ounce) cans black beans, drained
  • 1 (14.5 ounce) can diced tomatoes
  • 2 teaspoons vegetable oil
  • 2 (4 ounce) links sausage
  • 2 pinches dried dill
  • 2 pinches dried basil
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and butter up a 9x13-inch baking dish.
  • In a saucepan, mix lemon juice, sugar, butter, and rum. Simmer over low heat, stirring occasionally, until the sugar dissolves and the sauce slightly thickens, approximately 10 minutes.
  • Lay bananas cut-side down in the baking dish and generously coat them with sauce, saving any leftovers for serving on the side.
  • Roast in the oven until bananas reach a soft, sticky consistency, around 30 minutes.
  • In a separate saucepan, bring water and brown rice to a gentle boil. Cover, reduce heat to medium-low, and simmer for 45 to 50 minutes until rice is tender and liquid is absorbed.
  • In a skillet set over low heat, gently combine black beans and diced tomatoes until warmed through, approximately 10 minutes.
  • In a large skillet over medium heat, heat oil. Add sausage links and cook, flipping occasionally, until no longer pink in the center, approximately 10 minutes. Slice the cooked sausage into small pieces.
  • Combine rice, black beans, dill, basil, and sausage in a large bowl. Serve with bananas on the side.
