Bread and butter bush pickles

Spicy vegetable pickle enhances any dish, from sandwiches to roasts.
Ingredients:
  • 1kg zucchinis, cut into 1cm pieces
  • 2 red onions, sliced
  • 1 red capsicum, sliced
  • 20.00 gm Australian Bush Spices orange bush curry or yellow mustard seeds
  • 220g white sugar
  • 250ml white vinegar
Instructions:
  • Combine vegetables and 2 tablespoons of salt in a large non-metallic bowl. Cover and let stand for at least 3 hours or overnight to marinate.
  • Wash off the salt from the vegetables and transfer them to a large pan along with the rest of the ingredients. Heat until it boils, stirring to dissolve sugar. Lower the heat and simmer for 5 minutes, or until vegetables are tender. Spoon the mixture into sterilized jars while hot and seal them.
