Spicy jalapeño cornbread, perfect for pairing with Southwestern dishes.
Ingredients:
  • 3/4 cup plus 2 tablespoons water
  • 2/3 cup frozen corn, thawed,drained
  • 2 tablespoons butter or margarine, softened
  • 1 tablespoon chopped jalapeño chili
  • 3 1/4 cups Gold Medal™ Better for Bread™ flour
  • 1/3 cup cornmeal
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 2 1/2 teaspoons bread machine or quick active dry yeast
Instructions:
  • Carefully add all ingredients to the bread machine pan in the order specified by the manufacturer.
  • Choose the Basic/White cycle and opt for a Medium or Light crust color. Avoid using the delay cycle. Once the bread is baked, take it out of the pan and let it cool on a wire rack.
